Los compuestos fenólicos son componentes importantes del aceite de oliva. Además de ser los responsables de las características organolépticas del AOVE, son unos antioxidantes muy efectivos que juegan un papel importante en la dieta y en la salud humana. Existen evidencias científicas de que los compuestos fenólicos contribuyen en la prevención del cáncer, de enfermedades cardiovasculares y enfermedades neurodegenerativas, además de presentar actividad antimicrobiana. Además, reducen el nivel de glucosa en sangre por lo que ayudan a controlar la diabetes mellitus. Por último, se han relacionado con el perfil de la microbiota intestinal.
